Join the UAF Office of Sustainability and The Pub for one of campus’s most anticipated dining experiences - the annual Spring Birch Dinner! This years event will be held Friday, March 27, 2026. Doors at 5 p.m., dinner will be served at 5:30pm. All dished will feature birch products from OneTree Alaska.

The menu will explore the versatility of birch syrup and features: birch-glazed wild salmon bites with juniper smoked sea salt, borscht with birch-glazed beets, Norwegian-style stuffed beef rolls with birch potatoes, and birch medovik (layer cake). All of the birch syrup integrated into the meal is produced on the UAF Troth Yeddha' campus in the OneTree STEAM Studio. Three courses will be paired with locally brewed beers, and dessert will be paired with tea. Birch Dinner tickets can be purchased online for $56 at uaf.edu/sustainability

The birch-themed dinner is a collaboration between the Office of Sustainability and OneTree Alaska. The Office of Sustainability offers sustainability-them events throughout the year and houses student-run sustainability programs including the Wood Center Food Pantry, the Nanook Grown Program, the UAF FreeStore, the Upcycle Annex, Green Bikes, and the UAF Recycling Program. OneTree Alaska is a STEAM (STEM + Arts) program affiliated with the Agricultural and Forestry Experiment Station of the University of Alaska Fairbanks; in addition to numerous educational programs for all ages they founded the Fairbanks Birch Syrup Cooperative.
